Abai Sundae (North Korean-style sausage)
This specialty of Sokcho originated from Hamkyong-do Province in North Korea. The people who were displaced from North Korea due to the Korean War and settled down in Sokcho re-created this dish with a slight twist of the ingredients. The original recipe requires boiling or steaming pig’s intestines stuffed with sweet rice and clotted blood, but in Sokcho, people started using squid instead of the intestines.
